I got myself a new cook book (Leila Lindholm's A Piece of Cake) for Christmas. Not that I needed it, but I wanted it.
Yesterday I realized we had some overly ripe bananas in our fruit basket and I decided to see if Leila had any good banana recipies in her book. I ended up making Banana Chocolate Chip Muffins and they really turned out great! I'm used to making banana muffins and bread with mashed bananas in them, but this one had me slicing the bananas instead. Worked out great and added a different texture to the muffin.
I'm sure I'll be making these again.
