036. Try out five new muffin recipes (5/5)

So the weekend before last I made muffins again. I haven't done any in a long time but suddenly felt an urge for muffins with chocolate in them.

I dug out an old recipe book from a book shelf and used the "basic recipe" and added pieces of two kinds of chocolate; one 70% with salt in it and one 85%. The muffins turned out delicious, even though all the chocolate ended up at the bottom...

036. Try out five new muffin recipes (4/5)

I got myself a new cook book (Leila Lindholm's A Piece of Cake) for Christmas. Not that I needed it, but I wanted it.

Yesterday I realized we had some overly ripe bananas in our fruit basket and I decided to see if Leila had any good banana recipies in her book. I ended up making Banana Chocolate Chip Muffins and they really turned out great! I'm used to making banana muffins and bread with mashed bananas in them, but this one had me slicing the bananas instead. Worked out great and added a different texture to the muffin.

I'm sure I'll be making these again.

036. Try out five new muffin recipes (3/5)

For a picnic we were going to attend I made some muffins with banana and wild strawberries. The recipy suggested raspberries but we have a lot of wild strawberries in the garden and I wanted to use them.

The muffins turned out great. Strangely enough I wasn't supposed to smoosh the banana but just chop it in chunks. Made for an interesting structure...

036. Try out five new muffin recipes (2/5)

So it was Friday night yesterday. And I got the last issue of Allt om Mat (Everything about Food) in the mail...

I ended up trying a new muffin recipy; chocolate mud cake muffins with whipped cream. (It's called mud cake when it's all gooey and half baked in the middle, right?)

They were delicious! Instead of ordinary dark chocolate, I used a variety that has raspberries in it. That's what I had in the cupboards at home and it turned out to be a great choice!

I made 12 muffins. Boyfriend had one. I had two. And the rest went into the freezer!

036. Try out five new muffin recipes (1/5)

We were supposed to have friend over for dinner on Saturday night but they called in the morning and cancelled after a night of puking here and there. Thank you!

My mind was set on eating good though so boyfriend and I made a barbeque for the two of us. And I made muffins. Raspberry muffins with custard in them. I loved the taste of them and will try the recipy again. Next time I'll add more custard and raspberries though... :)
